When berries, apples, and other fruit cook they release pectin, which is a natural thickener.
The longer they cook, the thicker the jam will get. If your jam starts to get too thick, you can thin it out with a splash or two of water.

Some of my favorite ways to kick up my jam is to add flavorings and spices. Cinnamon pairs so perfectly with plums, especially for the holidays.
I also love to add a splash of citrus. My favorite to use is lemon juice, but orange also pairs so well with plums. Vanilla flavoring is another great addition to jams and jellies.
3. Homemade Cherry Jam
I am telling you, Cherry Jam is one of the easiest jams, and it tastes so amazing. All you need to make it is cherries, sugar, water, and lemon juice. The only tough part may be the cherry pits, but I have some tips for pitting cherries that will help.

The easiest way to pit cherries for jam is to use a straw to go right down the core of the cherry. This will pop out the pit with ease.
I then go in with a knife to remove any of the cherry around the pit. I like to use as much of the fruit as possible, and try to waste the least amount.
Dessert Recipes with Jam
Jam and dessert go hand in hand. Want a sweet treat, why not make it a little sweeter with homemade jam. Some of my favorite desserts to make with jam are:
- Mixed with your favorite vanilla ice-cream.
- Added to your favorite pastry crusts to make homemade turnovers.
- Spread on cinnamon rolls and rolled up to spice up store bought dough. Yum.
No matter what sweet treat you add jam to it is sure to be a winner. Especially if you are like me and have an extreme sweet tooth.
