What makes Homemade Cherry Topping thick?
When berries, apples, and other fruit cook they release pectin, which is a natural thickener. Cherries are one of the fruits that have a lower pectin level.
The longer your cherries cook, the thicker the sauce will get. If your sauce starts to get too thick, you can thin it out with a splash or two of water.
Best way to pit Cherries for a Homemade Chocolate Covered Cherry Sundae?
The easiest way to pit cherries is to use a straw to go right down the core of the cherry. This will pop out the pit with ease.
I then go in with a knife to remove any of the cherry around the pit. I like to use as much of the fruit as possible, and try to waste the least amount.
Homemade Chocolate Covered Cherry Sundae Ingredients
I am telling you, this is one of the easiest homemade sundaes, and it tastes so amazing. All you need to make the topping is fresh cherries, sugar, water, and lemon juice. Then add that over top of your favorite vanilla ice-cream with chocolate chips.
I love to add a slash of citrus to balance out the sweet cherries. My favorite to use is lemon juice, but orange also pairs so well with cherries. Vanilla flavoring is another great addition to cherry topping.

Chocolate Covered Cherry Sundae
Homemade Chocolate Covered Cherry Sundae
- 1/2 gallon Vanilla Ice Cream
- 1/4 cup Mini Chocolate Chips
- 1 pound Cherries
- 1 cup Sugar
- 1/4 cup Water
- 1 tbsp Lemon Juice
Wash and pit cherries, then dice to your desired size.
In a large skillet add water and cherries, cook on medium heat until cherries start to reduce. Cook for 10-15 minutes, stirring occasionally. Use the back of a fork to mash cherries if you want them a little more broken down.
Reduce heat to medium-low, and add sugar, and lemon juice. Stir continuously until all ingredients are well incorporated. Reduce until the sauce is your desired thickness. Cook around 10 minutes. Add a tablespoon or two of water to thin topping, if needed. Let topping cool.
Serve cherry topping over a scoop or two vanilla ice-cream and top with mini chocolate chips.
