Can Bananas be too Ripe for Banana Nut Bread?

One of the reasons Banana Bread is such an awesome recipe is because it uses up those bananas that you have let go just a little bit too far, or maybe a lot a bit.

One thing I love to do is if I have forgot about some bananas and they have gotten a little bit too brown to eat. I will peel them and pop them in the freezer. Then you can pull them out to make this recipe whenever you have the time.

Another reason Banana Bread is a superior go-to recipe is because it is so diverse. Bananas pair so well with so many flavors that you can really tailor it to whatever you are feeling that day. 

Some other ingredients you can add to take this recipe to the next level is chocolate chips, peanut butter, cinnamon, cream cheese, and all kinds of nuts. My personal favorite is adding nuts. I love to add pecans or almonds for a good crunch.

The best part of Banana Bread is that is can easily be frozen so if you need to make it ahead of time. Just bake it, let it cool and pop it into the freezer for the next time you need a sweet fix.

You need a quick present for someone special in your life, make them a basket with some of their favorite teas, and pop in a loaf. Homemade gifts are always the best. Coconut Banana Nut Bread

  • 1 Box Coconut Cake Mix 
  • 2 Ripe Bananas
  • 3/4 Cup Oil
  • 2 Eggs
  • 3/4 cup Shredded Sweetened Coconut
  • 1 tbsp Chopped Pecans (optional)
  1. Preheat oven to 350 degrees.

  2. In mixing bowl, smash bananas with fork.

  3. Add in Oil, Cake Mix, and Eggs, mix well. Fold in coconut.

  4. Grease a bread pan with oil or cooking spray.

  5. Add batter to bread pan and top with chopped pecans.

  6. Cook for 45-55 minutes or until golden. If top starts to get too brown, lightly place aluminum foil over bread and finish baking.
