Corn Salsa

As soon as my tomatoes start coming off I start making salsa, and Corn Salsa is one of my favorites. Fresh salsa made with corn, tomatoes, and onion, straight from the garden, is one of my summertime must haves.

I have been waiting to get enough tomatoes to make a small batch of salsa. We have been getting a red tomato, or two, here and there, but I was finally able to get about 7-8 good sized tomatoes.

Tomato Surprise

One thing that always surprises people is my husband and I don’t really like the taste of tomatoes, but we have a garden full of them. I love to make salsa, which works out perfectly, because he likes the tomato juice.

So I cut the ends off my tomatoes, and squeeze the majority of seeds and juice out of them. Then pass the juice off to my husband to make macaroni and tomato, of course.

I love to add corn to my salsa. Our corn was not quite ready, but I snuck a few ears anyway. I want my corn cooked a little before I add it to my salsa. So I put the whole corn, husk and all, into the microwave and cook for 3-4 minutes.

Now all that’s left to do is roughly chop the tomatoes, cut the corn off the cob, add some onion, and Mrs. Wages Salsa mix.

I would normally add Jalapeños, from the garden, but the peppers are not ready yet. But I like to use what I have, so the peppers will have to wait until the next batch of salsa.

Corn Salsa

Quick and Easy Corn Salsa

  • 7-8 medium Tomatoes
  • 1 tsp Salt
  • 1-2 tbsp Mrs. Wages Salsa Mix
  • 2 ears Corn
  • 1-2 tbsp Onion
  1. Take the top and bottom off of the tomatoes, and squeeze out seeds and juice

  2. Add Corn to microwave and cook for 3-4 minutes, in husk

  3. Dice onion and tomatoes, add to medium sized bowl

  4. Cut corn off the cob and add to bowl

  5. Add Mrs. Wages Salsa Mix, and Salt to taste
