Corn Stuffed Jalapeño Poppers

Corn Stuffed Jalapeño Poppers are the perfect sweet and spicy twist on stuffed peppers. Cream Cheese mixed with fresh Sweet Corn, added to a Spicy Jalapeño, screams Summer BBQ to me.

Chopped at Home

I am all about using my fresh garden vegetables to their full extent. I love to go out to my garden, pick a basket full of veggies, then take them to my kitchen and create something yummy and different. It is like my real life version of Chopped.

This weekend, I went out to my garden and noticed my corn had been blow over due to 60 mph winds. I knew my corn was too small harvest, but I went through and grabbed the biggest ears to try to save at least a few.

I am a big believer in waste not, want not. So I gathered my tiny corn, and took my basket to the kitchen to decide what I could whip up for supper.

An Idea Just “Popped” into My Head

Our Jalapeños are just now starting to come off, and I had just enough for a batch of poppers. I love a good Bacon Wrapped Jalapeño, and I cook them any chance I get. I also love to mix up what I stuff my poppers with. Then I seen my corn, and got an idea!

Sweet Corn and Spicy Jalapeños just sound like a match made in heaven. And man are they ever! The crunch of the fresh corn adds the perfect texture to the creamy popper filling.

Corn Stuffed Jalapeño Poppers

Easy Sweet Corn Stuffed Jalapeño Poppers

  • 20 Jalapenos
  • 1 8 oz block Cream Cheese
  • 1 cup Shredded Cheese
  • 2-3 ears Sweet Corn
  • 1/2 tsp Onion Powder
  • 1 tsp Salt
  • 5 slices Bacon
  1. Preheat Oven to 350 degrees

  2. Cook Bacon on Cookie Sheet in Oven for 20 min or until Crispy, draining off the grease occasionally

  3. Boil Corn in Microwave, or on the Stovetop for 15-20 minutes, and let cool

  4. Prep Jalapenos by cutting off the tops, slicing in half, & removing seeds

  5. Mix Softened Cream Cheese with Onion Powder, Salt, & your favorite Shredded Cheese (I used Mozzarella)

  6. Chop Corn off the Cob and add to cheese mixture

  7. Spoon Filling into Jalapenos and Cook @ 350 for 20 minutes, or until peppers start to soften, and turn slightly brown on the bottom

  8. Chop Bacon into Small Pieces and add to the top of your Jalapenos

  9. Enjoy
