The ingredients you will need for crock pot chicken are chicken, potatoes, carrots, onion, broth and your favorite seasonings. Easy enough, right? Just add all the ingredients in a crock pot and you are good to go.
Does chicken or vegetables go on bottom in crockpot?
In the debate on whether the chicken should go on top or bottom of the veggies in a crockpot. I have found that it really does not make a lot of difference, but I like to add the veggies on the bottom and place the chicken on top so I can season the top of the chicken well.
Does Crock Pot Chicken Thighs need to be covered in liquid?
It is best to leave the chicken slightly above the liquid. I like to add the seasonings to the top of the uncovered layer of chicken to ensure it soaks up the most flavor. If the chicken is completely submerged, you will likely have a flavorful broth, but your meat will be bland.
Should chicken be cooked on high or low in slow cooker?
Your chicken will likely be more tender if you cook it on low. I do cook my chicken on high from time to time, if I am in a rush. The best part of cooking in a crock pot is that you can get a tender bite every time, no matter what the temperature. But cooking chicken low and slow will ensure your meat is super tender.

I told you I had a tip that will make your life easier. Now that you have eaten your delicious meal, all that’s left to do is clean up. I recommend using a crockpot liner to make for easy clean up. Then when your done eating you can just pull out the liner and throw it away.

Crock Pot Chicken Thighs
Crock Pot Chicken Thighs with Potatoes and Carrots
- Crock Pot
- 6-8 Chicken Thighs
- 4-5 large Potatoes
- 5-6 Carrots
- 32 oz Chicken Broth
- 2 tsp Olive Oil
- 1 1/2 tbsp Lemon Pepper
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1 tsp minced Onion (optional)
- 1/2 tsp Salt
Peel and Chop Potatoes and Carrots and add to crock pot.
Add 1/2 seasonings over top of potatoes and carrots.
Add chicken broth to crock pot, and place chicken on top of potatoes and carrots.
Chicken should be slightly out of liquid. Drizzle olive oil over top, and add the rest of the seasoning.
Cook on high for 4 hours or until veggies are tender and chicken is cooked through.
