The Best Meat for Birria Tacos

First, you start with the meat, my favorite is chicken. Traditionally birria tacos are made with goat, but can be made with all kids of meat. My favorites are chicken and beef, but you can also make them with pork. I just throw all the ingredients in the crockpot, and forget about it.

The next step to making a great taco is the shell, my favorite part. The best shells are hard to find, but let me tell you, birria shells are the best. You may think finding a good taco shell is about the brand, or even corn vs. flour tortillas. But I think it is all about how they are cooked.

The last step in making the Best Birria Tacos are all about how you prepare them. I usually like a taco with all the fixings; lettuce, cheese, tomatoes, you name it. But these tacos are so good you don’t need all the rest. All you have to do is take your taco shell, fill it with chicken, but not too much, then top it with cheese.

Simple enough, right? But I’m not done yet. The best part about these tacos is the sauce. You heard me, you gotta dip them. Making the sauce is so easy, but it takes these tacos over the top.

Easy Birria Tacos

Easy Birria Tacos with Chicken

  • Crock Pot
  • Immersion Blender
  • 2 pounds Boneless Skinless Chicken Breasts
  • 32 oz Broth (Beef or Chicken)
  • 1 can Diced Tomatoes
  • 1 can Rotel
  • 1 can Tomato Paste (6 oz)
  • 1 large Onion
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 tsp Paprika
  • 1/2 tsp Cumin
  • 1 tsp Chili Powder
  • 1 package Corn Tortillas
  • 1/3 cup Oil (for frying Tortillas)
  • 1 cup cheese (for topping Tacos)
  1. Dice Onion and Add to Crock Pot.

  2. Put Chicken in Crockpot, with all other ingredients (except Tortillas, Oil, and Cheese).

  3. Cook on high for 3-4 hours or low for 6-8 hours.

  4. Once chicken is fork tender and cooked through, remove from liquid and use a hand mixer or forks to shred. Add salt to taste, if needed.

  5. Use an Immersion Blender to blend the soup in the crock pot.

  6. Add a little bit of the blended soup mixture to your chicken, but not too much. You don't want your chicken to have too much liquid when you fry it.

  7. Heat a small amount of oil in large skillet, just enough to fry one side of the tortilla at a time.

  8. Add your tortilla to the oil and cook for just a few seconds on the first side. Using tongs flip the tortilla over add a small amount of chicken and cheese to one half of the tortilla, then fold over to close. Cook on both sides until golden.

  9. Let tacos drain on paper towels, and add salt to the tortillas while they are still hot.

  10. Serve tacos using the soup as a dipping sauce on the side.
