Thin Mint Cookies are a popular girl scout cookie flavored with rich chocolate and peppermint. The bad part about girl scout cookies are they are so good and addicting, but you can only get them certain times of year. Thin mints are one of those sweets that I crave all the time. So, I knew I needed to find a way to cure my cravings at home.
What are Thin Mint Cookies made of?
The traditional thin mints are made by dipping a chocolate cookie into peppermint flavored chocolate. In my homemade version, I use Ritz Crackers instead of a chocolate cookie. Now I know what you are thinking, Ritz Crackers are not sweet. I was so skeptical that using a cracker instead of a cookie would actually work. But let me tell you, they taste exactly like a thin mint. Maybe better.
Which Mint is the best for Thin Mints?
It is very important to use the right mint when making thin mints. You want to make sure you are using a peppermint flavoring. Be sure that it is not spearmint. Spearmint does not mix near as good with chocolate as peppermint. Trust me on this one. Grab the right mint. Peppermint.
How to Make Homemade Thin Mints
Homemade think mints are super easy to make. You only need 3 ingredients, and you will likely have all three items.
- Melt Dipping Chocolate in a double boiler. If you don’t have a double boiler, you can use a small saucepan, with a metal or fireproof bowl placed on top.
- Add several drops of Peppermint Extract to melted chocolate.
- Dip Ritz Crackers in chocolate and place on parchment paper to harden.

Easy 3 Ingredient Homemade Thin Mint Cookie
- 1 Box Ritz Crackers
- 1 Bar Chocolate Almond Bark
- 1/2-1 tsp Peppermint Extract
Melt Almond Bark. You can use a bowl in the microwave or a double boiler.
Add drops of Peppermint to Melted Chocolate. A little goes a long way. Add slowly and taste until mint flavor is your desired strength.
Dip Ritz Crackers into Melted Chocolate and Mint Mixture.
