Potatoes are the perfect casserole to make for big get togethers. They are super easy to whip up, and are the perfect filling dish for a crowd. This makes them great for potlucks or gatherings. Potato Casserole is also a popular dish to serve when families get together for all sorts of events.
What is Potato Casserole made of?
Potato Casseroles are made by mixing all of the popular comfort foods together. Such as, potatoes, cheese, and sour cream, then topped with yummy Ritz crackers. Let me tell you the Ritz crackers are what absolutely makes this dish. There is something about adding the buttery crackers to the top that makes this casserole irresistible.
What kind of Potatoes to use for Casseroles?
The potato options are endless. You can use fresh potatoes, and chop or grate them yourself, but you know I love a good easy hack.
The best potatoes are found in the freezer section. You can use the shredded hashbrowns, but I personally prefer the diced frozen potatoes. Frozen Potatoes also saves you the hassle of peeling the potatoes. Trust me, frozen is much easier.
Topping Options for Potato Casserole
Now I personally love the Ritz Cracker topping for, but there are so many other options for topping your potatoes. You can use corn flakes, potato chips, cheese and bacon, or even French onions. The best part about casseroles is they are so flexible and you can make them to fit what you like best.

Easy Potato Casserole
Easy Potato Casserole made with Buttery Ritz Cracker Topping
- 2-3 cups Frozen Hashbrowns (Diced or Shredded)
- 1 can Cream of Chicken Soup
- 1/3 cup Sour Cream
- 1/2 cup Shredded Cheese
- 1/2 tbsp Dried Mince Onion (Optional)
- 2 tbsp Butter
- 1 sleeve Ritz Crackers
Preheat oven to 350 degrees.
You can mix the casserole ingredients in a separate bowl, and then add to casserole dish, but I like to mix right in the dish to save on clean up.
In small glass bowl melt butter, then add half of the butter to bottom of small casserole dish (8×8).
Add hashbrowns, cream of chicken, sour cream, minced onion, and cheese to casserole dish and mix well. Use a spoon to smooth out mixture in dish.
Make sure to clean the edges of the casserole dish if you mix ingredients inside dish.
Crumble Ritz Crackers on top of casserole, and drizzle with remaining melted butter.
Pop into the oven for 30 minutes or until potatoes are tender, and topping is golden. You can double this recipe for a crowd.
