Homemade Strawberry Popsicles

Homemade Strawberry Popsicles just in time for Summer. As you may know, our strawberry patch has taken off this year, and I have been making all kinds of strawberry desserts. But of course, we need something to keep us cool this Summer, and what better than a popsicle made with fresh strawberries.

The idea for strawberry popsicles came to me because I couldn’t keep my paws off the strawberries I had prepped for the freezer. I swear, every night I would mash up a batch, and as soon as they would be frozen, I would eat them.. All of them. At my first job, my boss would always put up strawberries, and keep them in the freezer in the back of the restaurant for herself. I would always sneak her strawberries, and eat them. I don’t think I ever got caught.

Ingredients

First of all, these Homemade Strawberry Popsicles are super simple with only 4 ingredients. You will need strawberries (duh), water, sugar, and lemon juice. All you have to do is prep your strawberries, and cut them to your desired size. Then, add sugar, smash the strawberries with a fork, and add in your water and lemon. It’s as easy as that.

Endless Possibilities

Next, I pour mine into silicon popsicle molds we got at Ikea, but you could also put them in an ice tray with some tooth picks if that is all you have. Or you could even make ice cubes out of them and serve them with Sprite, or your favorite alcoholic beverage. ; ) They will be good no matter how you eat them. Promise.

Homemade Strawberry Popsicles

Homemade Strawberry Popsicles made with fresh Strawberries

  • 3 cups Strawberries
  • 1/4 cup Water
  • 1/2 cup Sugar
  • 1 tbsp Lemon Juice
  1. Prep and cut your strawberries into 1/2 inch pieces

  2. In small bowl add sugar to strawberries and mash with fork until juice forms

  3. Add in water and lemon juice

  4. Pour into popsicle molds or ice cube tray

  5. Freeze overnight, or until solid
