Lemon Pepper Chicken
Do you ever get on food kicks, and just eat the same thing over and over until you just can’t eat it anymore?? Well, that is me right now with this Lemon Pepper Chicken. And I do not see this obsession coming to an end anytime soon. Keep reading below to find out my easy Lemon Pepper Chicken Recipe.
It all started a few weeks ago when I ordered a chicken dish at our local bistro. Something about the Spring weather being upon us really calls for lemon, and all the bright flavors. After I had this dish, I knew I had to try to perfect a lemony chicken recipe of my own.
With my newfound recipe inspiration in mind, I knew I needed the “perfect” chicken breast. What is the perfect chicken breast, you ask? Well in my most humble opinion, I do believe the most perfect piece of chicken requires the most perfect amount of pounding.
And for the chicken pounding we must break out the big tools. You guessed it…a rubber mallet. Don’t tell my husband, but his mallet gets way more use in my kitchen than in his toolbox. But you can use whatever tools you have to get your chicken pounded down to about 3/4 of an inch.
After I have my “perfect” chicken prepped, I add my seasonings, and pop it in the refrigerator to marinate. I try to let it sit for at least a couple of hours to soak up all the good flavors. Then it’s time to cook.
The cooking part is where this recipe starts to get good. I like to get a good amount of butter melted in a skillet on medium-high heat to get a good sear on the chicken. Then I will lower the temperature and put a lid on the chicken to make sure it cooks through. This recipe with also pair so well with one of my most popular side dishes, Lemon Pepper Carrots.
Now that you have a perfectly juicy piece of golden, Lemon Pepper Chicken, it’s time to serve. Be sure to give it a good squeeze of fresh lemon right before you serve it. Perfection. Lemon Pepper Chicken
Easy Lemony Peppery Chicken
- 4 Chicken Breasts
- 1-2 Lemons
- 2-3 tsp Lemon Pepper Seasoning
- 2 tbsp Lemon Juice (Fresh or Bottled)
- 2 tsp Pam Cooking Spray (Or Oil)
- 3-4 tbsp Butter
Prep Chicken Breasts by pounding to roughly 3/4 of an inch thickness (I put mine in a zip top bag)
While still in the bag, spray chicken with Cooking Spray or Coat with your preferred Oil
Add lemon Juice to chicken, and coat with 1-2 tsp of the Lemon Pepper Seasoning
Let marinate in the refirdgerator for at least 2 hours (Optional)
On medium heat melt 1 tbsp butter for each Chicken breast (I cook eash breast in a seperate skillet)
Add each breast to skillet, top with additional Lemon Pepper Seasoning, and add Salt & Pepper to taste
Cook 2 minutes on each side, or until a golden crust forms
Cover with a lid, and turn burner on low heat
Cook chicken until done and top with a squeeze of Fresh Lemon before serving
