Strawberry Shortcake Recipe Game Changer
Our strawberry patch has really taken off this year. Which means I am making all the strawberry treats, and loving every minute of it. Growing up, my family always had sponge cake with strawberries on top, but the sugar cookies are definitely a game changer.
Of course, I take shortcuts when I can so I like to use a rolls of sugar cookie dough, but you can also make your own cookies. I just press out the dough a little thinner than normal, and pop my cookies in the oven, and bake until they are slightly under done.
Then I crumble them up and use them in place of shortcake. My favorite part is the cookies give you a little extra crunch that pairs perfectly with the strawberries and cream topping.
Strawberry Shortcake Layers
Next, I mash up my strawberries with sugar, making sure to get all the yummy juice out of them. Now for the best part. The topping!
Of course you could top these with a dollop of Cool Whip, and they would be amazing, but I love to make an easy homemade topping to add to the top.
This topping is all you need to take any dessert to the next level. I literally use it on so many of my sweet treats. Fruit Pizza, Fruit Dip, and even my Marshmallow Fluff Recipe.

For the Grand Finale, the topping. I am telling you, this is one of the easiest toppings, and it tastes so amazing. All you need to make it is room temperature cream cheese, powdered sugar, and Cool Whip.

Sugar Cookie Strawberry Shortcake
Easy Sugar Cookie Strawberry Shortcake Recipe
- 1 roll Sugar Cookie Dough
- 1 package Fresh Strawberries
- 1/2 cup Sugar
- 1 cup Powdered Sugar
- 1 block Cream Cheese
- 1 tub Cool Whip
Preheat oven to 350 degrees.
Cut cookie dough into thin cookies (1/2 inch pieces), and place on cookie sheet.
Bake cookie dough for 6-8 minutes or until just under done. They will continue to cook when you take them out of the oven.
Wash and dice strawberries, top with granulated sugar. Smash with fork and put in refrigerator.
Whip room temperature cream cheese with powdered sugar until creamy. Fold cool whip into cream cheese mixture.
Once cookies are completely cooled, crumble a handful into a bowl and top with a spoonful of whipped topping.
Add a spoonful mashed strawberries and top with some more cookie crumbles.
Serve cold and Enjoy!
