Sweet and Tangy Carrot Salad is the perfect easy side dish when you are wanting to spice things up. Made with honey, lemon, and crushed red pepper these carrots are delightfully sweet, and a little spicy. But don’t worry, if you are not a fan of the heat, this recipe is just as delicious without the pepper flakes.

Carrots are probably my favorite garden veggie to cook. First of all, they are just the cutest, but they are also so versatile. You can spice them up all sorts of ways, and make them fit with any sort of dinner plans.

I love raw carrots, and this quick and easy salad comes together so quickly using a veggie peeler. Just shave little ribbons of carrots into a bowl, and top with the perfectly sweet and tangy dressing. Simple as that.

Carrot Salad
Sweet and Tangy Carrot Salad Recipe
- 4 large Carrots
- 4 tbsp Catalina Dressing
- 1 tbsp Honey
- 1 lemon (juiced)
- 1/4 tsp Crushed Red Pepper
- 1/4 tsp Salt
- 1/4 tsp Pepper
Wash and Peel Carrots.
Using a veggie peeler shave little ribbons of carrots into medium bowl. You can also use a bag of shredded carrots if you do not want to peel your own.
Once all carrots have been shaved, toss the ribbons of carrot in the Catalina dressing, lemon juice, and honey.
Add salt and pepper to taste, and top with a dash or two of crushed red pepper.
Serve cold and enjoy!
